Saturday Morning Activity

Yesterday afternoon Mike harvested this year's beet crop (which was about 15 lbs.) so this morning he washed, boiled, sliced and canned 1/2 of them into pickled beets. They turned out so pretty. Now he can eat the efforts of his labors all year!

YUM!!!! Not everyone is a fan of beets but I am. Good pickled beets are definitely a treat.

The beets are beautiful! One of my favorite things that my grandmother and mother canned. Store bought just doesn't cut it!
